Chicken Jhalfry


This week, I want to tell you about one of my favorite South Asian dishes: Chicken Jalfry. Let's try to cook this dish with very common spices available in every kitchen without compromise it's restaurant taste.

FOR MARINATION

Chicken – 1 kg cut into regular size
Turmeric powder – 1 tbl  spoon
Pepper – 1 t spoon

INGREDIENTS

Oil – 1 cup
Onion – 1 big size (finely chopped)
Garam  masala (gota)
Spunky leaf (TEJ PATA)- 2pcs
Onion paste- 3 tbl spoon.
Ginger paste – 1 tbl spoon
Garlic paste – ½ tbl spoon
Pepper powder -1 tspoon
Turmeric powder – 1/2 t spoon
Dhania powder -  1 tbl spoon
Tomato sauce – 3 tbl spoon
Salt to taste

HOW TO MAKE CHICKEN JHALFRY

·         First for marination mix chicken, turmeric and pepper very well and keep aside this mixture for 1 hour.

·         Take a pan and add 1 cup oil in it. Now put the pan on stove and switch on the stove. Put the finely chopped onion and fry until its co lour turns golden. Remove it and set aside.

·         Now add marinated chicken in the remaining oil. Fry it on medium heat until its color turns golden on both side. Remove it and set aside.

·         Now put garam masala and 2 pcs spunky leaf. Add 3 tbl spoon onion paste, 1 tbl spoon ginger paste, ½ tbl spoon garlic paste. Stair very well.

·         Add pepper powder 1 tspoon, turmeric powder ½ tspoon, dhania powder 1 tbl spoon and stir very well until leaves oil.

·         Add marinated chicken and 3 tbl spoon tomato sauce. Add salt to taste.

·         Add 1 cup water and cook on medium flame. After a while water dries and leaves oil,your dish is almost ready.

·         Add ½ tspoongaram masala powder and 1 tspoonjeera (cumin) powder and cook for 2 minutes.

·         Sprinkle the golden fried onion over the entire chicken.

·         Your dish is ready to serve


Chicken Manchurian

Chicken Manchurian

Chicken Manchurian is a popular starter recipe, which is relished by people of all age groups. This all time favorite Chinese recipe can be served with Fried Rice,Parathas. Manchurian is a traditional dish, which can be prepared at home in a simple way by following some simple steps given below. This chicken recipe can also be served as an appetizer.

Ingredients:

Oil  - 3 1/2 tblspn
Garlic – 1 tblspn finely chopped
Ginger – 1 1/2 tblspn finely chopped
Spring Onion (finely chopped) Handful 

Cornflour  – 1 1/2 tsp 
Water – 3 tblspn

For Marination:
Boneless  Chicken  – 2 large cut into cubes
Egg – 2
Soya Sauce – 1 tsp
Cornflour – 5 tblspn
 Maida – 3 tblspn
Salt to taste
Pepper to taste
For Sauce:

Soya Sauce – 1 tblspn
Green Chilli Sauce – 2 tblspn
Tomato Ketchup – 1/2 cup
Red Chilli Sauce – 3 tblspn
Vinegar – 1/2 tsp
Sugar – 1/2 tsp

HOW TO MAKE CHICKEN MANCHURIAN :
First for marination mix all the ingredients. Heat oil in a nonstick pan, put the chicken in oil and fry till golden on both sides. Remove it and set aside.
Mix all sauce ingredients and set aside. Mix cornflour with water and set aside.
In the remaining oil, add in ginger, garlic and spring onion and fry for a while. Add  sauce and mix well. Let it bubble up till it thickens.
Add water and bring it to a boil. 

Now add fried chicken and the cornflour. Mix very well. Now add spring onion and mix them very well.

Now Chicken Manchurian is ready to serve.

TURMERIC MILK

Turmeric has antioxidant and anti-inflammatory properties which makes it a suitable ingredient to fight off a lot of diseases.Turmeric is known as a potent natural remedy in Ayurveda.It is also called natural aspirin as it is used to relieve pain due to headaches and wounds.When it is applied to wounds,it helps the blood to clot which prevents further bleeding and infections.Turmeric is also used as beauty agent.Regular use of face wash and cream enriched with turmeric gives the skin the natural glow,removes pimples,wrinkles.On the other hand Milk is full of Calcium and consumption of milk strengthen the bone and the brain health.
Turmeric milk has numerous benefits and it is a traditional Ayurvedic drink to boost your health.

Ingredients:-

               1. 1 teaspoon Turmeric powder
               2. 2 1/2 Cup Milk
               3. 1 cup water
               4. 4-6 smashed black peppers

How to make Turmeric Milk :-

1. Take 2 1/2 cup milk in a pot.
2. Put the pot on the stove and switch on the stove to high flame.
3. Wait for the milk to boil.
4. Add Turmeric powder
5. Add smashed black pepper
6. Mix them very well.
6.Add water

Drink it every night before going to bed. Remember that this drink should not be consumed when it is hot.
Malai spinach is basically a North Indian cuisine. It is delicious and served as a vegetable side dish with rice, toast.It can be used as a filling in Dosas.

Ingredients:-


  • Red Chilly powder                                       1 pinch.
  • Coriander powder                                         1/2 spoon.
  • Black pepper powder                                    1/4 t spoon.
  • Nutmeg Powder                                            1 pinch.
  • Turmeric powder                                           1/4 t spoon.
  • Hot Spices                                                     1 t spoon.
  • Clarified butter                                              3 Spoon.
  • Butter                                                             4 Spoon.
  • Asafoetida                                                     1 pinch.
  • Fresh Spinach                                                1 kg.
  • Salt                                                                 1 t spoon.
  • Fresh milk cream/Malai                                 1/2 Cup.   

How to make Malai Spinach :-

1. wash the Spinach leaves well,drain the water and chop finely.

2.Make a paste mixing the red chilly powder,Coriander powder,black pepper powder,nutmeg powder,turmeric powder and hot spices with water in a pot.

3.Put a pan on a oven. Heat clarified butter on medium flame add asafoetida. After few seconds add the paste of spices.Cook for 2 minutes.

4.add the washed and finely chopped spinach.Sprinkle salt to taste.Cover the pan with lid and cook for 6 to 8 minutes.Now replace the cover and cook with occasional stir without lid to dry away the water.

5. Once the majority the water has been vaporized off, add the fresh milk cream/malai.

6.Stir it till the malai spinach is moist but not watery.

Now the malai Spinach is ready to serve with steaming plain rice.
ROYAL PARWAL

I personally feel that Parwal is highly underrated vegetable.But it is so versatile that it can be used in many recipes.One of them is ROYAL PARWAL, a traditional Bengali dish. The" royal " tag is attached to it because of the richness in its stuff.




INGREDIENTS:-

Parwal .............................................  500 grams.

Gram Pulse......................................   250 grams.
Coconut graded ...............................  1 pice.
Hot Spices.......................................   1 tea spoon.
Sugar................................................  2 tea spoon.
Salt to taste
Clarified butter.................................  as required.
Turmeric Powder..............................  1 tea spoon.
Cumin Paste ....................................   2 tea spoon.
Ginger Paste.....................................   2 tea spoon.
fried and crushed cumin seeds.........   1 tea spoon


HOW TO MAKE ROYAL PARWAL


  • Slightly scrap the outer part of Parwal and take out the grains from inside of the Parwals. Now mix parwal with salt,sugar and turmeric powder so that a thin layer of the mixture coats over the Parwal. 
  • Now take a Pan and add clarified butter.When it is sufficiently hot, slide parwals into clarified butter and fry them until slightly brown in color.  
  •  Keep Gram Pulses in water for about 3 to 4 hours and then make paste of it.
  • Now take another Pan and add clarified butter.When it is sufficiently hot, add ginger paste, chilly powder,cumin paste into the clarified butter.Cook for 3 to 4 minutes on medium flame.
  • Now add to it graded coconut and paste of Gram pulse and stir them very well until the mixture leaves oil.
  • Sprinkle fried cumin dust over the entire mixture. 
  • Now remove the pan from flame and put them aside.
  • Use the mixture as stuff and place them inside the fried Parwals. Now your Royal Parwal is ready to serve.It can be used as a delicious vegetarian dish.




BHAPA PRAWN (CHINGRI) 


Prawn (chingri) Bhapa is an authentic Bengali recipe and had been cooked in every house since long.It is enjoyed best with warm plain rice.


INGREDIENTS:-
  • Around 500 grams medium size prawn cleaned and divined.If you like you can use lobster but always avoid small size prawn.
  • Paste of chilly and white mustard seed around 6 table spoon.
  • Poppy seeds 2 table spoon
  • green chili 12 pieces
  • Turmeric powder 2 t spoon
  • 1/2 coconut paste
  • Mustard oil 100 gram.
  • salt and sugar to taste.



HOW TO MAKE BHAPA PRAWN (CHINGRI) 


  • Cut back of the prawn with a knife and take out the dorsal vein completely. It is main cause of food poisoning.wash the prawn properly and dip it in salted water for around 5 to 6 minute
  • .Make a paste mixing mustard oil, coconut paste,mustard paste salt , sugar, turmeric powder.
  • Now take out the prawn from salted water and dry it to remove excess water. 
  •  Dip it into the previously prepared mixture and marinate them for 15 minutes.
  • Take them out of the mixture and place them(prawn) one by one on a banana leaf.
  • Sprinkle some chopped chilly on the prawns.
  • Take another banana leaf to cover them completely.
  • Wrap the entire package carefully with a rope and cooked for around 8 to 10 minutes on medium heat in a pressure cooker.
  •  Now your Prawn(Chingri) Bhapa is good to go!! Take it out and serve it with warm plain rice and ENJOY. 
Cauliflower with Curd

This Cauliflower with Curd  is a simple curry with sweet flavors of curd.It is quite easy to cook and delicious in taste. It can be served with veg pulao, bread, paratha  and also can be served with jeera rice or steamed rice.
Ingredients:
  • Cauliflower-250 grams, cut into florets.
  • Curd - 300 to 400 grams
  • Peas - 2 tbsp.
  • Sugar -3/4 tsp
  • Salt - 1 tsp
  • Mustard oil- 3 tsp.
  • Cumin seed-3/4 tsp.
  • Coriander Powder- 1 tsp.
  • Fenugreek Powder- 2/3 tsp.
  • Red chilly powder-1/3 tsp
  • Turmeric powder- 3/4 tsp.
  • Asafoetida powder- a pinch
  • Chopped coriander leaves- handful.











How to make Cauliflower with Curd


  •          Take a small pot and add water  and salt in it. Now put the pot on stove and switch on the stove to high flame. Boil water and add Cauliflower pieces into boiling water. Boil for 3 to 4 minutes, then switch off the stove and soak them for 8 to 10 minutes. Place the cauliflower in a sieve  to drain the excess water.
  •          Now take a pan and add  Red chilli powder, cumin seed, coriander powder, fenugreek powder, turmeric powder, asafoetida powder . After 10 sec add the cauliflower and salt and mix all the ingredients very well.
  •            Cover the pan with a lead and cook until the cauliflower florets are tender. Now remove the pan from flame and set aside.
  •          Now take a bowl. Mix Curd, Red chilli powder, Salt, Peas and chopped Green chillis into the bowl and mix them and put them aside.
  •          Now take another  pan and add 2 tbsp of oil. When it is sufficiently hot add the curd mixture into oil and some water and stir them very well.
  •          Cook for another 5 minutes and then add the cauliflower and cook for another 10 minutes on low to medium flame.Finally add  sugar (as required to taste) and mix well.
  •          When the gravy coats the cauliflower and leaves oil, your dish is ready.

        Now garnish with coriander leaves and serve hot. 



Cheese Palak Kofta

Ingredients:-



  • Fresh Spinach- 450 grams.  
  • Fresh cheese - 6 Cups.
  • Finely Chopped Ginger- 1 tbl spoon  
  • Finely chopped green Chilly -2 pecs    
  • Turmeric Powder- 1/4 t spoon
  •  Nutmeg Dust - 1 Pinch
  • Garam masala-1/2 t spoon  
  • Asafoetida- 1 Pinch             
  • Salt - 1 t spoon or as per taste.
  • Gram flour -1 3/4 Cup
  • Clarified butter -1 ltr.

How to make Cheese Palak Kofta


1. Clean the spinach leaves, remove the stalk and rinse the leaves with water thoroughly.Place the leaves in a sieve to drain excess water.

2. Take hot and soft cheese and remove the excess water,then mash well. Add finely chopped ginger,green chilly,turmeric powder,Spinach,Asafoetida,Nutmeg dust,garam masala,salt,gram flour.Mash till the mixture looks like a smooth dough.The mixture needed to make kofta is ready.

3. Pour clarified butter in non stick pan(kadhai) and heat it sufficiently. When it is hot significantly, pour some mixture and roll into kofta shape.Slide 5 to 6 kofta ball in the ghee at a time and deep fry them until brown in color. Take out the fried koftas in a plate and similarly fry the rest.

4. Serve koftas with sauce.


Pasta

    Pasta is perceived as unhealthy dish,though many of us love this dish.There are two type of Pasta available in the market, whole grain pasta and refined grain pasta.As whole grains are healthy and refined grains are not, we should choose whole grain pasta. If we add some other nutritious ingredients like beans and veggies, then pasta can be a healthy meal.
   
      Pasta provides Carbohydrate, vitamins and minerals too.It supplies good energy for your muscles as well as your brain.It keeps glucose level stable.Interestingly pasta is free of cholesterol and so it can take place in your weight loss diet plan. If you are worried about sudden fluctuation in blood sugar level, pasta is ideal choice for you, as it prevents the sudden high and lows in blood sugar level.


    How to cook Pasta :-


  • Put a pan on oven and add chopped beans and other veggies(as you wish) and saute for 2 mins.Add water just enough to cover them partially.Add salt to taste.
  • Cover and cook on a low to medium heat until the veggies are  done.
  • Turn off the switch of your stove and empty the pan into the strainer to remove water from veggies.
  • Take another large pot and fill 2/3 of it with water.Remember under fill the pot with water will make the pasta sticky. You can also add hot water to reduce your cooking time.
  • Put the pot on oven and switch on the oven to high flame.Add 1 or 2 table spoon salt to taste.
  • Wait for the water to boil.
  • Add pasta to the water and stir. Take care that the pasta does not stick to the bottom.
  • Cook 8 to 10 mins and stir every so often on medium flame to prevent sticking.
  • Take a piece of pasta out to check whether it is done or not.Bite into the pasta if it is too hard to bite then the pasta is not done it needs to cook a little longer.
  • Add the previously cooked veggies and mix gently with pasta.Cover and cook for a while.
  • Now turn off the switch of the oven and empty the pot into the strainer to remove water from pasta.
  • Your pasta is ready to serve. Put it on a plate and your favorite sauce. Use fresh parsley leaves for garnishing.


Prawn Pulao

One of the simple and quick cooking Prawn rice recipe.Get the taste of Prawn and rice with delicious coconut flavor.

Ingredients:-

  • Basmati rice  -1/2 kg
  • Medium size Prawn (deveined) -1/2 kg
  • Coconut milk -2 cup
  • Thinly sliced Onion - 2 pcs
  • Garlic paste -1/2 Spoon
  • Chilly Paste -1/2 Spoon
  • Cumin Paste -1 Spoon
  • Cassia  -2 pcs
  • Almond Oil - 1/2 Cup
  • Garam masala -1/2 t spoon
  • Salt and Sugar to taste.
How to make the recipe :-
   Start with adding 2 t spoon oil to pan, add cumin paste, chilly paste,salt and the prawns.Fry them for a while.When the prawns turn nice golden brown, add 2 cup water and cook on low to medium heat until water dries up. Switch off the stove and keep aside.
         In a pan for the Pulao add 2 t spoon oil and put the sliced onion in as a base. When it turns golden, take it out from the pan and keep aside for garnish.
    Now put garam masala, cassia and rice in the same pan and fry them for a while.Now add coconut milk.Cover and cook on low heat until the rice is done about 80%.Add the fried prawns and mix them well.Add sugar to taste and cook 10 to 15 mins on low heat.Now switch off the stove.Use fried onion for garnish. Now your Prawn Pulao is ready to be served.
